After more than 15 years of research led by Professor Carlo Giuseppe Rizzello \u2013 Full Professor of Food Microbiology at the University of Rome \u201cLa Sapienza\u201d \u2013 the collaboration with Celery has resulted in a pipeline of products aimed at offering technologically advanced nutritional solutions.
\nCelery has patented an innovative fermentation process of plant-based matrices, capable of producing a yogurt-like beverage made from legumes and cereals. The product is organic, gluten-free, lactose-free, and contains no added sugars or fats. It is a fermented platform product, suitable in various formats (liquid, powder, creamy) and applications (artisanal and industrial ice cream, spoonable and drinkable yogurt-like products, shakes, etc.).
\nBased on the developed fermentation process, the company is working on a pipeline of highly innovative products in both the food and biomedical fields, with the potential to revolutionize the current market offering from both a functional and qualitative perspective.
\nThe patented technological platform has been positively evaluated by Siryo SpA \u2013 an investor specialized in disruptive technologies in the Human and Environmental Health sectors \u2013 which has supported the project since the company\u2019s founding in December 2019, by providing an initial funding round necessary for the development of the technology and product pipeline.<\/p>\n
\u201cWith the \u20ac2.5 million capital increase, Celery will be able to strengthen the development of its operations, specifically by building its first production facility, supporting R\\&D activities, and launching the commercialization of its first products (artisanal ice cream, yogurt-like products, and shakes) through the opening of branded retail outlets, in line with the 2022\u20132024 Business Plan.\u201d
