“IUPPI wins the Sherbeth in Palermo.”

High-quality artisan gelato, delicious and capable of telling the story of a region: this was the central theme of the 2022 edition of the Palermo event.

IUPPI, the first product from our startup, the artisan gelato made from fermented plant base, was awarded second place at Sherbeth 2022 – the International Festival of Artisan Gelato, the most important in Europe.
We increasingly believe that inclusion, research, quality, and care are the future of food – and more.

Thanks to our gelato master Taila Semerano for her professionalism, kindness, and talent over these past months, which made this achievement possible.

Her “Fuoriglasse” flavor impressed a top-tier technical jury and competed – brilliantly – against 37 gelato makers from around the world.

According to IDENTITÀ GOLOSE, “Among the most interesting tastings, the Fuoriglasse flavor (…), a light and elegant gelato, with delicate sweetness and citrus freshness: ‘We started from a plant-based fermented base made of rice, chickpeas, and lentils, inoculated with Lactobacillus brevis and Lactobacillus plantarum. We added almond syrup concentrate, peel from Gargano Femminello lemon (a Slow Food Presidia), and a mix of saturated and unsaturated fats — in this case, cocoa butter and extra virgin olive oil; sucrose was replaced with maltitol. The result was a custard-flavored gelato without milk, eggs, or gluten, and with 14% sugar content.’ Iuppi for everyone is clearly a concept of inclusive and sustainable gelato, developed from a legume- and cereal-based fermented drink, created by the Apulian startup Celery: ‘From this fermented beverage, 14 gelato flavors were born. On August 4, we inaugurated the gelateria in Polignano, and soon we’ll open one in Milan.’”
